Summer means a bountiful CSA basket. This week's basket includes: peas, potatoes, cucumbers, green onions, corn, radishes, kale, garlic scapes. Swiss chard, zucchini, lettuce, cabbage, apricots, and a jar of pickles. Thankfully, only one head of lettuce this week. But I still have left-over lettuce from last week.
I have big plans for the produce:
* strawberry rhubarb cobbler (finish last week's rhubarb)
* pesto (freeze for later use)
* kale, chorizo, and potato soup
* zucchini omelette
* sautéed celery root with Swiss chard (finish previous celery root)
* steamed corn on the cob
Salad will be frequent. I'll make chicken stir fry to make use of more veggies.
