Cooking strawberries

Last week, I ended up with three pints of strawberries - two from the CSA basket and another that I had purchased the day before. I used a few each day in my cereal and even in salad.

Most of the strawberries got used in two desserts. First, I made strawberry rhubarb cobbler.

The rhubarb also came from the CSA basket. I expect to bake lots of cobblers this summer. The recipe that I use is quick to prepare, and is so easily adapted to different fruits.

I was still left with lots of strawberries. I found a recipe in Finally.... Food I Can Eat for strawberry mousse. This recipe called for almond or soy milk, instead of regular milk.

I'm not sure if my lemons were extra large, but next time I will use half the lemon juice and twice the honey. The consistency was fabulous, but I had to mix in extra sugar to make it edible.
