Cooking rice dishes

I just realized that it's been ages since I posted anything about my cookbook journey. I finally finished Rice & Risotto with Caribbean Rice Pudding.

This dish includes currants, chopped pineapple, and chopped mandarin orange. It's delicious when cooked well. But when prepared according to the recipe is nasty and grey. I didn't take a picture of my first attempt. For the second attempt, I used arborio rice instead of ground rice. And I used 2 cups milk substitute instead of 5. Also, reduced the ground allspice to a pinch.

Delicious on my take 2 (with the changes that I mentioned). Pretty bad when I closely followed the recipe.

It looks so tempting! I really like rice recipes. One of my favorites is porridge with chocolate, milk and brown sugar. It is so filling and delicious.
