Can gluten-free baking turn out delicious?

The Betty Crocker gluten-free recipe collection relies heavily on Betty Crocker and Bisquik gluten-free mixes, which aren't available I'm Canada. However, I did try a couple of recipes that were meant for baking from scratch.

 

The corn bread turned out great.

This is my favorite recipe on the collection. I'll keep this recipe, even of I get rid of the book. Warm cornbread is great with honey. It makes the most fabulous bread for sandwiches.

I thought that the cinnamon scones would turn out great. I added wild blueberries for more flavor.

They look good, but they taste boring.

Why?
Are you just curious or do you need to reduce/eliminate gluten from your diet?

Someone in my household has a gluten sensitivity, so I prepare gluten-free food. Some gluten-free cookbooks are better than others. Gluten-Free Quick & Easy has great recipes that are easy to prepare.
