Sour cream, cheese, and bacon are common. Until I saw the recipe in Potatoes, I never thought of using stir-fry veggies.
This veggie combo was delicious. It combines leeks, zucchini, carrots, and baby corn. Typically, I would pair the veggies with rice. They work well with the potato. The quantity is so substantial that I only needed to pair it with a small side.
I ended up with lots more veggies than I could stuff into potatoes. I used the left-overs to make vegetable fried rice.
