Did I cook a lifetime supply of scallop soup?


Tomato and rice scallop soup from Totally Scallops took longer to prepare than I anticipated.

That's OK, because I now have a large pot of soup in my fridge. This soup isn't amazing, but it's flavorful and comforting on a winter day. This soup tastes better left-over than when I first prepared it. Probably a good thing, considering my vast quantity of left-overs.
