This roast veal is fruity orange

I'm watching the series premiere of Iron Chef, and I just realized that I haven't told you about the latest recipes that I tried on my cookbook journey.


This past Sunday, I cooked roast veal with oranges and carrots from Apples for Jam.


The oranges and lemons add a lovely fruity flavor without overwhelming the veal. They also prevent the veal from drying out when reheating left-overs.

This cookbook gave me confidence in mashed potatoes, which I paired with the veal. I realize that mashed potatoes seem like easy comfort food. However, I used to avoid it, thinking it was too time-consuming. Now that I finally learned how quickly potatoes boil when cut up, I'll prepare mash potatoes from time to time.


What dishes do you like to eat but avoid cooking?

I know there's tons of stuff I avoid cooking because it's messy, but can't think of anything at the moment! ;-D But, wanted to tell you, didn't you post the recipe for the one pot chicken thighs and brown rice and carrots a while back? I hope so! But wanted to say, I made it tonight and it was very nice. I did use chicken broth instead of plain water though! Hubby liked it, too.

Hmm... that recipe doesn't sounds familiar. I haven't cooked with brown rice in a while. However, it doesn't mean I didn't post something like that... as I've been looking over my early posts, I find lots that I completely forgot!
