When trying recipes on my cookbook journey, I usually try to follow them accurately, because I'm using these recipes to judge the book. When I revisit recipes or try recipes that are not on my journey, I feel free to improvise. It was because I was barely using my many cookbooks that I started this cookbook journey almost two years ago.


It wasn't completely by design that I played with the scallop chowder recipe from Totally Scallops. I thought might need to try again, but this forgiving recipe turned out great!

As you can see, this is a hearty soup, full of scallops, veggies, potato and bacon. Enough for a light supper on a cold winter day.


So, what did I get away with in this recipe? It started with clam juice - I couldn't find any. After purchasing the scallops, I was committed and couldn't spend too much time tracking down clam juice. A quick search suggested substituting a mix of chicken stock and water.


My other two changes were accidental. My fault for not paying enough attention, as I tried to rush. First, I cooked all the chopped leeks in the chowder base, instead of reserving half for the veggie mix. Then I forgot to put the remaining dived potatoes in the pot with the veggies! I only noticed at the end, and cooked them in the microwave.


Despite my mishaps, the soup was delicious.

That looks very yummy :) I'm not really a scallops fan, but this looks good.
