What's your comfort food?


For me, there is nothing like a moist potted roast or beef stew, the meat so tender that it falls apart at anything but the mildest touch. I recall my grandmother's brisket, and the warmth of familial love fills me.

 

The beef casserole in the French cookbook takes a long time to cook. It requires planning, as the meat must marinate for a day. However, the amount of time spent preparing the ingredients and working at the stove is reasonable. While the beef cooked, I could do other things.

 

Time and patience are needed for beef this tender.

I rarely make beef stew or pot roast, because it takes so long... and because mostly I'm not happy with the results. This recipe turned out great, so I'll return to it.
