When good flavour is not worth the wait


Yes, the omelette from the French cookbook is really good. Caramelized onion, yumm. However, my usual omelettes are good enough. The difference in taste doesn't seem worth the difference in effort.

It never would have occured to me to check a cookbook before making an omlette. I am surprised to hear, though, that the sweetness of the onions didn't overpower the egg.

I think this omelette tasted more of onion and mushrooms than egg, but sometimes it's more about the filling than the egg.

I agree that I wouldn't look up this recipe - but this journey is partly about finding recipes that I've overlooked.
