mmm dessert

This evening I prepared apple cake from the Moosewood cookbook. It's not really a cake. It's apples poached then baked within a light cake. Quite yummy! And not too time-consuming.

This recipe calls for ground almonds instead of flour, and I found out that I can use my blender to grind almonds. This was probably obvious to some of you, but I actually looked for almond flour or ground almonds at the grocery store.

There's also no leavening, just beaten egg white to keep it fluffy. Which might be useful to some of you on Passover.

At the Amish store, they have bags of grounds almonds. They actually have all sorts of kinds of flour, shelves of it, I was amazed to see all the different kinds.

It sounds yummy :)
