two recipes, two outcomes

Tomatoes with forcemeat from the Moosewood cookbook is actually stuffed tomoatoes. Entree-sized stuffed tomatoes. This recipe took longer to prepare than I anticipated (due to my pathetically slow chopping of all those mushrooms), but quite tasty, and I have left-overs.

Salad nicoise also took a long time, but only turned out so-so. I'm really hoping that this gets better as it sits, because I have a mammoth amount of left-overs. I probably should have included more artichoke hearts. I purchased a 6-ounce jar, but while preparing saw that the recipe called for 6 artichoke hearts quartered.
