Mmm apple pie

The apple pie in A Taste of Quebec is a sweet and savory blend of apples, nutmeg (a lot of nutmeg), and honey. I almost wish it were a different fruit, as this runs counter to my expectations for apple pie.

Poached pears with wine custard was not a success... because I could never bring myself to make it. It should be delicious, but the recipe just seemed too complex.

Despite the unevenness of recipes in this book, I'll keep it for now. I think that I have another Quebec recipe book in my collection (if I didn't already give that away). If the other turns out better, then I'll get rid of A Taste of Quebec.

The boyf used to be a chef. When I see your posts about food, I often wonder if I should post some of the things he has taught me. He has some incredibly sexy recipes, like creamy rice pudding mouse (mmmbbbluuuuuggggghh) and a couple of paella/fideuá recipes and the best way to make a tortilla. Mainly it is the little tips, like how to chop veg for different purposes and when not to stir things. Would you be interested in that kind of thing? I mainly want to make sure his expertise isn't lost.

I'd definitely read your food blog entries. Because I have so many cookbooks, I rarely tend to try recipes I see online, but I know there are others who want recipes. The tips could be really useful. If you have any suggestions for being quicker at chopping veggies, that would be a huge help.

I don't know... I've been cooking for 20+ years, and my food prep is still fairly slow.I'm sure there's something I could be doing different.
