Poached pears with wine custard was not a success... because I could never bring myself to make it. It should be delicious, but the recipe just seemed too complex.
Despite the unevenness of recipes in this book, I'll keep it for now. I think that I have another Quebec recipe book in my collection (if I didn't already give that away). If the other turns out better, then I'll get rid of A Taste of Quebec.
