An amazing combination of vegetables fills this dish with flavor: onions, carrots, celery, tomatoes, and zucchini. You could make a great vegetarian version by dropping the meat and replacing the chicken stock with vegetable stock.
Today I didn't pay quite enough attention to what food I needed to get. I picked up parsley and carrots, despite having enough at home. And I was supposed to get two leeks.... not just one. However, my fridge is so full of veggies, that there's no point in picking up the extra leeks just yet.
