eggs, but only semi-cute

Even with all that eggplant casserole, I ended up making luncheon dish potatoes. These are really good, but the recipe was too vague. It's basically mashed potato nests (in muffin cups), each containing an egg, which is baked until the eggs are set.

If you decide to try this, keep in mind that unless your muffin cups are deep, you can probably only contain small eggs. After mopping up lots of egg white, I ended up cracking each egg into a cup, spooning the yolk into the potato nest, then adding a small amount of egg white.

I think I baked my eggs 20 minutes, but I didn't want runny eggs.

Good news - the eggplant casserole mellows. I didn't like the smell when I first made it. When I ate some the next day, it wasn't bad, but I wasn't sure I'd bother with it again. Today I ate more and it's really good. Although, I'm still not sure that it's worth spending 3 hours to prepare.
