Chinese mushroom soup

Today I went to another grocery, where I found dried shitake mushrooms, portobello mushrooms suitable for stuffing, and pancetta. They only had dried chanterelles, so I thought that maybe dried would be OK. However, when I got home, I saw that the chanterelles scrambled eggs recipe definitely calls for fresh. The quest for chanterelles continues!

Tonight I made Chinese mushroom soup. With lots of ginger and garlic, two types of mushrooms (shitake and cremini), and scallions, it was quite a flavorful light soup. The rice noodles just enough substance.

This soup isn't one of my favorites, but I could see cooking it sometimes.
