This risotto is the last dish I'm trying from the Betty Crocker gluten-free recipe collection.
The risotto was pretty good. It's filled with bell peppers, broccoli, and mushrooms. However, it's missing that something extra to make it a favorite.
I tried only five recipes from this book. The cornbread is a favorite, and I'll copy that recipe out. The other recipes ranged from pretty good down to mediocre.
As so many recipes in this collection rely on packaged ingredients not available in Canada, there aren't much more than 10 recipes I can use. I might as well take this book off my shelf now.
