maple syrup season

Friends of mine pointed out that it's almost maple syrup season. Of course we can get it all year round, but this is the time of year when it's harvested.

I'm almost done with The Original New York Times Cook Book, so I'm looking ahead to my next book. Because of the season, I'm pulling A Taste of Quebec off the shelf, and choosing five recipes that use maple syrup:
* Eggs in maple syrup
* Maple-baked chicken breasts
* Apple Maple Pudding
* Pork tenderloin with shallots and maple syrup
* Maple syrup mousse

I am not, however, making pickles with maple syrup!
