Warm mushroom, spinach & pancetta salad

This spinach, mushroom, bacon salad is full of awesome! I recommend pancetta for bacon in recipes. It's a bit of a pain to dice the thick slab, but worth it for the smokey flavor.

I finished the oyster mushrooms, mini portabello mushrooms, and cremini mushrooms. I discovered, however, that I bought waaaaay too much baby spinach. I think one box will be more than enough for both recipes. But I have a second box!

The salad was well-paired with leftover Chinese noodle soup.
