What I cooked last week

I tend to cook a lot of stir-fry, but last week I braised beef, carrots, onion greens and mushrooms. When I stir-fry, the heat brings out the sugars and carmelizes. Braised dishes have added moisture.


In summer, I don't feel like potato leek soup. So, I cooked the leeks with chicken, and paired the dish with roast potatoes and green beans.


I enjoyed the variety of summer vegetables in this meal. I roasted eggplant, zucchini, and mushrooms. I cook corn on the cob in the oven, roasting in greased and salted foil.

I cooked the shrimp and basil in soup stock. The shrimp was super-moist, and I'll use the remaining stock and shrimp to start soup. Come back next week to see what else I put in the soup and how it turns out.
