Last week, we got corn in our  CSA basket!

This plate is full of so much goodness from the farm basket. We continue to get potatoes, every week more than the last. I sautéed the chicken with garlic, tomatoes, zucchini, and basil.

Even a simple sandwich tastes better with farm produce.

Even the eggs in this sandwich come from the farm. Sandwiches are a good way to use lettuce when I don't want another salad.

But sometimes I do want another salad. ;-)

We've been getting a variety of lettuce. That variety and the changing veggies keep salads interesting.

This week's fruit were saskatoon berries. They look a but like blueberries, but the flavor isn't as strong.

I baked them in a coconut milk custard. I think I overcooked the custard, and it was too firm. But it tasted alright.

I mixed the peas and remaining corn into risotto.

That's a sprinkle of basil on top.

That's a good looking risotto.

I tend to eat mostly local produce, which is more challenging in winter which we are currently experiencing.

I have that same issue. But I usually freeze some of the farm produce. I might buy extra this year just for freezing.
