Finally cooked the sunshine squash

The sunshine squash sat on my counter all through September. I even cooked some of the other squash I received after that early squash. At 6 pounds, this squash was too big to cut in half and roast. Pumpkin soup recipes call for a 3-pound pumpkin.

Today, I broke down and decided to make soup with half the squash, and set aside the other half for roasting.

I used the pumpkin soup recipe from my Moosewood cookbook, because the recipe indicated that it could be used for other winter squash. The tomato, cinnamon, and white wine give this soup an amazing depth of flavour.
