Vegetable reboot in my fridge

This week and last week, I did a poor job of keeping up with the enormous CSA baskets. So, on Friday, I invited a friend over to take lots of veggies off my hands before I got this week's basket. I froze lots of corn and zucchini. I kept some items in my fridge. And potatoes in my pantry.

This week, my basket contained: cauliflower, beans, broccoli, corn, radishes, zucchini, grape tomatoes, field tomatoes, small cucumbers, garlic, hot peppers, apples, peaches, and a jar of tomato sauce. First apples and peaches of the season!

As part of dinner tonight, I cooked cauliflower with tomato sauce.

The tomato sauce was incredibly fresh and flavourful. It needed tomato paste for thickening, but is otherwise the best tomato sauce I ever had.

The zucchini is enormous, and I plan to cook stuffed zucchini. Other cooking plans include beef with broccoli, roasted corn, roast potatoes, and a salad (beans, radish, and cucumber).

With a 3-day weekend, I am hopeful that I can cook everything in plan.
