How do you stuff baked potatoes?


Sour cream, cheese, and bacon are common. Until I saw the recipe in Potatoes, I never thought of using stir-fry veggies.

This veggie combo was delicious. It combines leeks, zucchini, carrots, and baby corn. Typically, I would pair the veggies with rice. They work well with the potato. The quantity is so substantial that I only needed to pair it with a small side.

 

I ended up with lots more veggies than I could stuff into potatoes. I used the left-overs to make vegetable fried rice.

 

How do you stuff your baked potatoes?

Scoop out the insides, mix with butter, salt, pepper, lots of cheese and mustard than put back into the skins, sprinkle cheese on top and back in the oven. My fave...

Scoop out insides; mix with lowfat cheddar and steamed chopped broccoli; restuff and bake.
