I picked out another set of colorful recipes from Apples for Jam.

 

Gold
* Sautéed cauliflower
* Waffles

 

White
* Baked fish parcels

 

Brown
* Spaghetti with ground beef
* Lentil rice
* Pot-roasted veal with sage and garlic

 

The other night, I cooked baked fish parcels.I wrapped the fish in parchment paper to cook. Perhaps I should have taken a picture before cooking, when the parchment was still white.

 

I loved this recipe, because the parchment kept the fish moist and trapped the flavors of lemon, garlic, and thyme. For the final few minutes, I added wine to the pan, the steam lightly scenting the fish.

 

As a white recipe, I used haddock, but any thick white filet will do.
