Escoveitche de pescado (Caribbean fish dish) from the Moosewood cookbook was reasonably tasty, but not worth the preparation time. Overall the Moosewood cookbook is pretty good, so it's remaining on the shelf.

Mushroom and tofu stew from Vegetarian Quick & Easy is more a mushroom and tofu stir fry than a stew. But I don't object. It's really tasty and quick to prepare!

Spicy cauliflower is tangy without being too hot. The mild flavor of cauliflower gets lost amid the garlic, ginger, and spices. It remind me of how tofu absorbs flavors, but with the crunchiness of cauliflower.

For the next five recipes from Vegetarian Quick & Easy, I'll prepare:
* Avocado salad with ginger
* Stir-fried vegetables with tofu
* Tunisian vegetable omelet
* Malawi yellow rice (all recipes actually have a country listed, but this book contains two very different yellow rice recipes)
* Bananas with mango (I love this line from the recipe description: "The rum can be omitted of course, but it may be missed.")
