Surprise salmon souffle

When I cooked poached salmon, I ended up with lots of left-over salmon. So, I found a recipe in The Original New York Times Cookbook that called for cooked salmon - Salmon Souffle! I think that I got it to rise a reasonable amount.... but then I let it sit in the warm oven while I finished getting ready, and it sank :-(. Still tasty and moderately fluffy, but not dreamy fluffy.

My mom used to make the most amazing souffles, I haven't had one in over 30 years, but I still remember how lovely they were, dreamy, as you say. :)
