My mushrooms include portobello

Today I made chicken piccata, the penultimate recipe from my current adventure's journey into Chicken Breasts. I was planning on using cremini mushrooms, but I didn't have enough, so I also used a portobello mushroom.

The chicken was fabulous! This is another great recipe. It needs a bit of time to prepare (at least for someone like me, who is a bit slow at chopping), but soooo worth it. And I've got left-overs. :-)

Tomorrow morning I'll cook the red wine marinade, so that the chicken can marinate during the day. Not sure if I'll eat the final chicken dish tomorrow or Sunday. This weekend I'll look at the Portuguese cookbook and decide on the first 5 recipes from that book.

Oh, you can't go wrong with portobello mushrooms! mmmmmm. Chicken piccata sounds wonderful, too.
