Mango chutney glazed chicken breast

Tonight I cooked the fifth recipe from Chicken Breasts - Glazed Chicken Breasts. I chose the mango chutney glaze (mostly because I have mango chutney on hand). Another easy and tasty recipe. The glaze was made from mango chutney, butter (margarine, for me), and garlic - all mixed up in the blender.

I did, however, modify the recipe, as I was dubious that chicken breasts would be fully cooked after 10 minutes per side at 350F. Instead, I cooked them at 400F, 15 minutes per side.

And now I'm half-way through Chicken Breasts. My initial thoughts are that this book is a keeper. Most of the recipes have been really good - only one less than stellar. Many recipes are quick (both to cook and prepare) and would be suitable for a week night. Only a few recipes take more time or preparation.

We'll see how this cookbook holds up for the remaining five recipes.

I'm enjoying these cooking posts :). I love the idea of doing all the recipes in a book and discussing them, too, mostly because how often do we buy cookbooks or get them as gifts and maybe not cook anything at all! Sad, really. This gets you out and about in the cooking world :)

Yes, that's exactly why I'm going through these recipes. :-) However, I'm not doing all the recipes - just ten from each book. If I did all, I'd never get through all my cookbooks!

I have a couple of books I don't think I've ever used, and a couple in which I've only cooked a couple of recipes. Sometimes I wonder if I'll end up getting rid of any books - or if I'll end up finding ten good recipes in each.
