Tonight I cooked a recipe from the Chicken Breasts book. In the 20+ years that I've owned this book, I've often thought about trying this recipe, but even when I had all the ingredients on hand, the thought of pouring rum into a frying pan, and then setting it on fire has always made me nervous.

Well, it turns out that there was no need to panic. The recipe said to wait 30 seconds after adding the rum, and it's possible I waited longer. By the time I tried to light the rum, the alcohol had already evaporated.

The chicken turned out great! Although, probably not exactly as intended by the recipe. I think I sliced the bananas too thin, and they ended up getting soggy in the melted margarine, instead of becoming crisp. But it tasted yummy.

Mmm, sounds lovely! I've never been brave about trying combustible recipes, but I sure think yours sounds good :)

I saw a cookbook yesterday I came thiiis close to buying *g*. Funny how posts call your attention to things :)

I was worried about the flames, but it turns out that I don't need to light a flame to burn off the alcohol, which makes me feel much better.
